Poppy Almond Muffins

Cooking Time30 min

Ingredients

  • 3 cups flour
  • 2 1/4 cups sugar or sugar substitute
  • 1 1/2 teaspoon baking powder
  • 1 1/2 teaspoon salt
  • 1 1/2 cup light vegetable oil
  • 1 1/2 cup skim milk
  • 3 eggs, or 6 egg whites
  • 1/2 teaspoon almond extract
  • 1 1/2 tablespoon poppy seeds

Instructions

1. Preheat oven to 350 degrees F. Grease or use muffin papers to line two 12-cup muffin tins.

3. Combine flour, sugar baking powder, and salt.

4. In another bowl whisk oil, milk, eggs and extract until smooth.

5. Add dry ingredients mixing until moist. Then gently stir in all the poppy seeds.

6. Fill muffin tins and bake 30 minutes.
