Ingredients

  • MUFFINS
  • 1 cup whole wheat pastry flour
  • 1 tablespoon NuNaturals White Stevia Powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 tablespoon chia seeds
  • 1 egg
  • 1/4 cup unsweetened applesauce
  • 1/4 cup low fat milk
  • 1/2 cup plain Greek Yogurt
  • 2-3 full drops of NuNaturals Lemon Liquid Stevia
  • 1/2 tablespoon lemon juice
  • FROSTING
  • 1/4 cup plain Greek Yogurt
  • 2 tablespoons Ricotta Cheese
  • 1 full drop of NuNaturals Lemon Liquid Stevia

Instructions

  1. Preheat oven to 350 degrees F. Line a muffin tin with 9 to 10 liners.

  2. Combine all dry muffin ingredients into mixing bowl & stir together well.

  3. Add wet muffin ingredients to the mixing bowl and stir together well.

  4. Fill each muffin tin liner about 2/3 full with the batter.

  5. Bake muffins for approx. 10 to 12 minutes or until knife or toothpick comes out clean.

  6. While muffins are baking, use hand mixer to blend Greek Yogurt, Ricotta Cheese, & Liquid Stevia.

  7. Let the frosting set in the refrigerator.

  8. Let the muffins cool completely.

  9. Frost the muffins.
