This sounds so delicious! I've never thought of adding mushrooms and spinach to a quesadilla before, but I really like both of them in my sandwiches!

What a wonderful idea! I love the combination of flavors of the spinach and mushrooms, and cook with these frequently when making pasta dishes, rice dishes, pizzas, and even fritattas, but I never really thought to do a Mexican version! Mushrooms are considered by many to be a superfood while having a great earthy umami flavor, and spinach is very high in iron. Together they are a nutrition powerhouse and make a great meat substitute!
