This is a wonderful vegetarian main dish for when you are craving Mexican food! It is festive, colorful, and full of nutrition! I might even make a breakfast version, with a few poached eggs laid on the top right at the end. I even like to scoop this stuff up with some crispy blue corn tortilla chips and eat it like a dip!
