Healthier Carrabba's Italian Grill Copycat Meatballs

For a light and tasty dish that may be the best meatball recipe you've ever tried, whip up a batch of these Healthier Carrabba's Italian Grill Copycat Meatballs. This lightened-up restaurant copycat recipe features three different types of lean meats.

Ingredients

  • 1/2 pound lean ground pork
  • 1/2 pound lean ground veal
  • 1/2 pound lean ground beef
  • 2 large eggs, lightly beaten
  • 1/4 cup reduced fat Parmesan cheese, grated
  • 4 garlic cloves, finely chopped and cooked until crispy
  • 1/3 cup dried whole wheat bread crumbs
  • 1/4 cup parsley, finely chopped
  • 1 cup light olive oil
  • Salt and black pepper, to taste

Instructions

  1. In a medium bowl, mix together the beef, pork, veal, eggs, cheese, garlic, bread crumbs and parsley. Add salt and pepper to taste.
     
  2. Heat the light oil in large wide pan over medium high heat. Roll the meat mixture into 1 1/2-inch balls and set aside.
     
  3. Fry each meatball in the oil until golden brown. Remove with a slotted spoon to a plate lined with paper towels.

There's a mistake in the recipe above. It states Lamb in the recipe under instructions. Lamb is not an ingredient in this recipe. It's suppose to be Veal not Lamb.
