Cooking MethodCasserole


  • 1 large chicken
  • 6 onions, chopped
  • 1 bunch celery, chopped
  • 1 pound mushrooms, chopped
  • 1 green bell pepper, chopped
  • 1 can (2 ounce) pimiento
  • 1/4 pound butter
  • 3 cups Pomi Chopped Tomatoes
  • salt and pepper to taste
  • 8 ounces dry rice


  1. Half-cover chicken with water and boil until meat separates easily from bone.
  2. Cool slightly, remove skin and bones, and chop meat into small pieces. Save the broth.
  3. Sauté onions, celery, mushrooms, green pepper and pimento in butter until tender, then add Pomì, salt, pepper, and chicken.
  4. Cook the rice in boiling salted water.
  5. While the rice is cooking, preheat the oven to 375 degrees F.
  6. Drain rice and add to the chicken mixture. Bake for approx. 20-30 minutes.
