Vegetable Based Stuffing

Whether for Thanksgiving or Christmas, this Vegetable Based Stuffing recipe from Rocky Barragan is bound to please. Ingredients

  • 4 slices of Ezekiel Sesame Bread
  • 1 cup Morningstar Meal Starter Crumbles
  • 3 cups onion
  • 4 cups celery
  • 1 cup carrots
  • 1 cup chicken broth
  • 1 cup mushrooms
  • 1 tablespoon poultry seasoning
  • 2 rosemary sprigs
  • 1 tablespoon garlic, minced
  • 2 teaspoons thyme
  • Salt and black pepper, to taste
  • Olive oil spray

Instructions

  1. Cube your bread, spray down with olive oil spray and toss in a 250 degree F oven to toast.
     
  2. Dice up all your veggies and make sure to keep them about the same size or maybe a bit bigger than your cubed bread.
     
  3. Spray down a pan with olive oil spray and saute your veggies until they are tender. If you feel your pan is starting to dry out add a little chicken croth instead of olive oil spray. Covering your pan will allow your veggies to steam and get tender a lot quicker.
     
  4. Add in your seasonings and then add in your Morningstar Crumbles or the meat of your choice.
     
  5. Once your Morningstar Crumbles are heated through and the flavors have combined you can add your toasted bread cubes.
     
  6. Combine the ingredients together. If you feel you need to add a bit more moisture go ahead and add a bit more chicken broth.
     
  7. Spray down a casserole dish with olive oil spray and toss in your stuffing.
     
  8. Place in a heated 325 degree F oven and cook for an hour.
     
  9. Serve and enjoy!
