Chilly Fruit Salad

Fruit salad is the perfect side dish or dessert for any party or meal. You can make this frozen dessert salad anytime of the year because no fresh fruit is required. Simply use a one pound can of fruit cocktail and you're all set!

Notes


  • If you don't have a meatloaf tray, two ice cube trays can be subsituted.

Cooking MethodCasserole

Ingredients

  • 1 pound can of fruit cocktail in light syrup
  • 1 tablespoon lemon juice
  • 16 large marshmallows, cut or torn into quarter pieces
  • 1 3-ounce package cream cheese
  • 1 cup light whipping cream
  • 2/3 cup light mayonnaise
  • 1/4 cup maraschino cherries, drained
  • 1 1/2 cup graham crackers crumbs
  • 1/3 cup brown sugar
  • 1/3 cup butter substitute, melted

Instructions

  1. Drain fruit cocktail and reserve 1/4 cup syrup.
     
  2. Add syrup to fruit and lemon juice
     
  3. Let stand until marshmallows soften.
     
  4. Mash cream cheese and mix with mayonnaiseblend well; add marshmallow mixture.
     
  5. Fold in whip cream and add drained fruit and cherries; mix lightly.
     
  6. Line a meat loaf pan with wax paper.
     
  7. Mix crumbs, sugar substitute and butter subsitute together until crumbly.
     
  8. Pour salad into meat loaf pan and sprinkle with remaining crumbs; cover and freeze.
     
  9. A half hour before serving, remove to refrigerator.
