Cooking MethodCasserole

Ingredients

  • 8 large eggs, or equivalent egg substitute
  • 1/2 cup red pepper, diced
  • 1/2 cup green pepper, diced
  • 1 cup ham, cooked and cubed
  • 1 cup cheddar cheese, grated
  • Salt and pepper, to taste

Instructions

  1. Beat eggs with wire whisk; add rest of ingredients to taste.
     
  2. Spray 8- inch skillet with butter-flavor Pam and heat over medium flame.
     
  3. Add egg mixture, cover and cook until desired consistency, 5-10 minutes (DO NOT STIR).
     
  4. Carefully slide frittata onto plate. Serve with Hot sauce, if desired.

I do this all the time...but at the end I put the cheese on top and stick in broiler for a couple minutes...this way top of eggs cook and cheese melts.
