Healthy Applesauce Muffins

"Applesauce muffins are the yummiest after-school snack, quick breakfast, or on-the-go treat. And this applesauce muffin recipe makes the most delicious and moist muffins ever! These apple muffins are seriously good! They’ve got all the apple flavor we love and since some of the fat and sugar is replaced by applesauce, I don’t feel so bad eating one, two, or more! This applesauce muffin recipe is definitely one you want in your rotation! These muffins are simple, could be made with kids, and taste amazing!"

Ingredients
- 2 cups All-purpose flour
- 1 teaspoon Cinnamon
- 1 teaspoon All spice
- 1 teaspoon Baking soda
- 1/2 cup Unsalted butter, softened
- 1 cup Granulated sugar
- 1 Large egg, room temperature
- 1 cup Unsweetened applesauce
- 2 teaspoons Vanilla extract
- 1/2 cup Raisins, optional

To make your applesauce muffins, start by preheating your oven to 350 degrees and adding liners to a muffin tin.

Add the flour, cinnamon, allspice, and baking soda to a medium-sized mixing bowl.

Whisk the ingredients together until they’re combined and free of any clumps.

In a separate large mixing bowl, cream together the butter and sugar for a few minutes or until light and fluffy.

Add the egg, applesauce, and vanilla and beat again until smooth.

If you are adding raisins, take about 2 tablespoons of the flour mixture and place it in a small bowl with the raisins.

Toss the raisins until they are completely coated in flour.

Add the remaining flour mixture into the wet ingredients slowly, stirring just until combined.

Fold the raisins gently into the batter.

Use a cookie scoop to portion the batter into the prepared muffin tin.

Bake the muffins in the preheated oven for about 20-25 minutes or until a toothpick inserted into the center is clean once removed.

When the muffins are baked, remove them from the tin and let them cool on a wire rack.

Serve the muffins warm out of the oven!
