Super Simple Macaroni Salad

Whether you need a quick and easy meal or side dish, macaroni salad recipes are always great. For a recipe that will really blow you away, try out this Super Simple Macaroni Salad recipe.

Ingredients

  • 1 cup Miracle Whip Light
  • 8 ounces whole wheat elbow macaroni noodles, cooked and drained
  • 2 tablespoons apple cider vinegar
  • 1 cup celery, sliced
  • 1 tablespoon mustard
  • 1 cup red and green pepper, chopped
  • 1 teaspoon sugar substitute
  • 1 teaspoon salt
  • 1/4 cup onion, chopped
  • 1/4 teaspoon black pepper
  • 1/2 cup reduced fat cheese cubes (optional)

Instructions

  1. In a large bowl, combine Miracle Whip Light, vinegar, mustard, sugar, salt and black pepper until everything is smooth.
     
  2. Add in the celery, macaroni noodles, peppers, onion and cheese cubes, and toss to coat well.
     
  3. Cover and refridgerate at least 2 hours.

Which type of mustard are you using? DRY or prepared like Plochman's?? Which type of cheese cubes do you favor? (sounds like a Feta would work good.
