No oven needed is not a misnomer with this vegan food dessert, as here a dehydrator does all of the prep work. This raw food recipe for No Oven Lemon Cookies from Dorothy Delaney uses only 5 ingredients to make light and healthy cookies that are sure to please. Since these cookies are gluten free and fit for a raw vegan diet, this idea is one of the best no bake dessert recipes to serve to a large crowd.

Cooking MethodNo Bake

Ingredients

  • 1 cup cashews, not soaked
  • 1 cup coconut flakes
  • Juice of 1 lemon
  • 1 1/2 tablespoon honey, maple syrup or agave
  • 1/8 cup lemon zest

Instructions

  1. Process the cashews in the food processor until mixture resembles a coarse flour.

  2. Then, add the other four ingredients until mixture forms a ball.

  3. Dehydrate until you have a nice and moist cookie, about 8 to 10 hours at 105 degrees F. Process longer for a crispier cookie.
