Awesome Oatmeal No Bake Cookies

  • 2 cups sugar substitute
  • 1/2 cup butter substitute
  • 1/2 cup skim milk
  • 1/3 cup unsweetened cocoa powder
  • 1 dash salt
  • 3 cups oatmeal
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fat-free peanut butter or almond butter


  1. Combine first 5 ingredients in a saucepan. Cook, stirring, over medium heat until mixture boils.
  2. Remove from heat and add remaining oatmeal, vanilla, and fat-free peanut butter or almond butter.
  3. Stir until thick. Quickly drop by tablespoons onto the waxed paper.
  4. Refrigerate until firm, about 2 hours.

I used only about 1/3 of a cup of Splenda and it was plenty sweet, I however had a package of sugar free chocolate pudding and substituted the pudding for the cocoa. Regardless, I think next time I will throw a mashed banana in, too! Thanks!

I do not like to use substitute items. Would I use the same amount of ingredients that you are showing or a different amount of the substitute sugar/butter & peanut butter?

These are the best cookies I've had in a long time, yeah the whole family loved them. I'm making them again right now, gotta go!
