Pumpkin Cookies

These oatmeal pumpkin cookies have stevia and oats in them, making this cookie a healthier dessert option for you. Rocky says, "These delicious cookies are the perfect dessert to bring out during the Fall/Halloween Season."

Makes64 cookies

Cooking Time30 min

Ingredients

  • 1 can organic pumpkin
  • 1 cup applesauce
  • 3 scoops of Vanilla Whey Protein Powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 egg
  • 1 teaspoon pumpkin pie spice
  • 2 cups steel cut oats
  • 4 packets of Truvia stevia
  • 1 teaspoon salt

Instructions

  1. First up you'll want to grind up your oatmeal to form a flour. I used a food processor.
     
  2. Next combine all your ingredients into a bowl and mix.
     
  3. Set your oven 350 degrees F.
     
  4. Place the cookie mix in the fridge to chill for about 15 minutes.
     
  5. Now to start dropping your cooking onto a cookie sheet that you've sprayed down with olive oil. Use a tablespoon to scoop out your cookie dough and drop them onto your sheet.
     
  6. Bake in the oven for 15 minutes. Allow to cool and enjoy!
