Detox Chili

Feeling a bit off? Get your body back on track with this Detox Chili recipe from Katy Gillis of Gillis Fitness Consulting. Featuring heaps of tasty vegetables, this easy chili recipe is one of the very best detox dinner recipes. Plus, this chili is far more substantial than most other detox diet recipes out there.

Notes

A very effective detox would be to eat nothing but the chili for 2 full days. Drink nothing but water or water with fresh lemon juice during this weekend detox.

Ingredients

  • 1 small eggplant
  • Salt and black pepper
  • 1/3 cup extra virgin olive oil
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 cup celery, chopped
  • 6 garlic cloves, chopped
  • 2 cans diced tomatoes with juice
  • 1 teaspoon oregano
  • 15 ounces pinto beans, drained
  • 1 1/2 teaspoon basil
  • 3 tablespoons parsley
  • 1 can (15 ounces) chickpeas, drained

Instructions

  1. Heat oil in large pot.
     
  2. Add eggplant, onion, peppers, celery, salt, pepper, and garlic. Sauté until tender.
     
  3. Add rest of ingredients and simmer, covered, for 45 minutes.

HOW CAN THIS BE CALLED CHILI?IT DOES NOT HAVE CHILI POWDER IN IT!NOT EVEN CHILI PEPPERS!.SHOULD BE CALLED STEW OR SOUP.
