Cooking MethodSlow Cooker


  • 1 can chickpeas, drained
  • 1 package boneless skinless chicken breast, cut into bite-size pieces
  • 4 carrots, sliced
  • 3 red potatoes, diced but not peeled
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 can (14 ounces) diced tomatoes
  • 1/2 cup celery, sliced
  • 1 cup peas, fresh or frozen
  • 2 cups broccoli florets, fresh or frozen
  • 6 garlic cloves, diced
  • 4 cups all-natural chicken broth
  • 2 cups water
  • 1 1/2 cup brown rice
  • 2 cups baby spinach, chopped
  • 2 teaspoons thyme
  • 2 teaspoons black pepper
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon red pepper


  1. In a saucepan, cook the chicken, onions, peppers, and garlic in hot olive oil for 3 minutes on high heat.
  2. Add remaining ingredients to the pot and cook, covered, on medium-high heat for 30 to 40 minutes or until rice is cooked and tender.

Slow Cooker Directions: Follow steps 1 and 2, and then place ingredients in slow cooker. Cook on Low setting 6 hours, or High setting 3 hours.

What is a " package" of chicken ? 1 or 2 lbs ?

For this recipe, feel free to use 1 pounds or 2 pounds of chicken. Just keep in mind that the more chicken you use, the longer the cooking time will be. Hope this helps! - FaveHealthyRecipes Editors
