Baked Beef & Hash Brown Casserole

This yummy Baked Beef & Hash Brown Casserole is the perfect combination of meat and potatoes. Follow this easy casserole recipe with hash brown potatoes and mixed vegetables for a healthy, hearty, and delicious dinner.

  • 4 cups frozen hash browns
  • 3 tablespoons olive oil
  • 1 pinch black pepper
  • 1 pound extra lean ground beef
  • 1 cup water
  • 1 3/4 ounce low sodium gravy mix
  • 1/2 teaspoon garlic salt
  • 1 cup low fat cheddar cheese, shredded
  • 1 can fried onions
  • 10 ounces frozen mixed vegetables


  1. Preheat oven to 400 degrees F.
  2. Combine frozen hash browns, olive oil, and black pepper in a 9x13 inch casserole dish.  Press around bottom and sides. Bake for 15 minutes.
  3. Brown beef; drain.
  4. Stir in low sodium gravy, water, and garlic salt; boil.
  5. Add frozen mixed veggies; reduce heat, cook 10 minutes.
  6. Stir in 1/2 cup cheddar cheese and 1/2 can fried onions and place in potato shell.
  7. Reduce oven heat to 350 degrees F and bake uncovered for 15 minutes.
  8. Sprinkle with remaining cheese and onion; bake for an additional 5 minutes.
