    Chocolate Free Brownies

    This healthy brownie is perfect for anyone who doesn't love chocolate. Don't feel marginalized by your chocolate-loving friends and family - make these Chocolate-Free Brownies for everyone to enjoy!

    Ingredients

    • 1/2 cup (1 stick) margarine, softened
    • 1/2 cup unsweetened applesauce
    • 1 1/4 cup granulated sugar
    • 3 egg whites, lightly beaten
    • 1 1/2 teaspoon vanilla extract
    • 1 1/2 cup white whole wheat flour
    • 1/2 cup uncooked rolled oats
    • 1 teaspoon cinnamon
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • salt, to taste
    • 2 medium baking apples, peeled, cored, chopped
    • 1/4 cup pecans, chopped, toasted
    • 1/2 cup sugar substitute for baking
    • 1 tablespoon hot water
    • 1/4 teaspoon vanilla extract

    Instructions

     Brownies:

    1. Heat oven to 350 degrees F.
       
    2. Spray baking pan with non-stick vegetable coating; set aside.
       
    3. Beat together margarine, applesauce, sugar, egg mixture and 1 1/2 teaspoons of vanilla in large bowl until light and fluffy.
       
    4. Combine flour, oats, cinnamon, baking soda, baking powder, and salt in a separate, medium mixing bowl.
       
    5. Add dry ingredients to egg mixture and mix until combined.
       
    6. Stir in apples and nuts and spread batter into prepared pan.
       
    7. Bake about 1 hour, or until a toothpick inserted in the center comes out clean.
       
    8. Cool completely on wire rack.

     

    Glaze

    1. Blend confectioners' sugar, water, and the 1/4 teaspoon of vanilla until smooth.
       
    2. Spread or drizzle over brownies.
