High Protein Breakfast Pancakes

High Protein Breakfast Pancakes
High Protein Breakfast Pancakes

"Whether you're a bodybuilder needing extra protein or just trying to get enough of this macronutrient each day, this high protein breakfast is a delicious way to reach your nutritional goals. These pancakes are not keto-friendly, but they do offer a good balance of macros. We’ve developed several protein pancake recipes offering flavors for every palate but, personally, I am a huge fan of cinnamon-y things. One of my favorite cookies is the tasty snickerdoodle, so it's a dream come true to wake up to a stack of these mouth-watering flapjacks."

Makes5 pancakes

Ingredients

  • 1 cup oats
  • 1 tablespoon coconut flour
  • 1 scoop vanilla protein powder
  • 1 cup Greek yogurt
  • 1 egg white
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon Stevia
  • 1 teaspoon cinnamon
  1. Add oats to a food processor and process for 30 seconds until you have a fine powder.

  2. Add flour, protein powder, yogurt, egg, milk, vanilla, baking powder, Stevia, and cinnamon.

  3. Process for about 20 seconds until mixed well.

  4. Use a 3 tablespoon portion scoop to spoon batter onto a pre-heated, greased skillet.

  5. Heat 2-3 minutes per side.

  6. When finished, top pancakes with whipped topping and ground cinnamon
