"This Zucchini Cornbread is out of this world! It’s a delightful twist on regular cornbread, and it is totally delicious. It is perfectly moist and has a wonderful hint of sweetness. It’s vegan, gluten-free, sugar-free, oil-free, and super low in calories - only 74 calories a slice! Another added bonus is that this cornbread recipe is super easy to make. All you have to do is shred the zucchini, and mix all ingredients together in a large mixing bowl. After that, just bake for 30 minutes and you’re done!"

A food processor makes really quick work of cutting up the zucchini, but a good sharp box grater will work just fine too. It is a lot easier to shred than cheese! This tasty side is high in fiber so it fills you up, and the zucchini gets nice and sweet as it cooks! I like the zucchini slices on top as an indicator as to what's inside! Very clever and cute!

I think including the zucchini slices is a neat idea, too! :)
