No Guilt Cracker Barrel Copycat Meatloaf

Cracker Barrel restaurant recipes are delicious, but are often not very good for you. Good thing this No-Guilt Cracker Barrel Copycat Meatloaf recipe allows you to enjoy that classic taste without the guilt!

Notes

Makes 42 five-ounce servings.

Ingredients

  • 10 pounds 97% lean ground beef
  • 30 ounces onion, chopped into 1/4-inch squares
  • 1 pound green peppers, diced
  • 10 eggs, or equivalent egg substitute
  • 5 tablespoons salt
  • 1 1/2 tablespoon black pepper, freshly ground
  • 1 1/2 quart canned tomatoes, diced
  • 2 1/4 cups whole wheat biscuit crumbs
  • 1/2 cup organic catsup

Instructions

  1. Preheat oven to 300 degrees F.
     
  2. Place all of the ingredients, except the catsup, in a large bowl, and mix completely with gloved hand. Place the mixture in three loaf pans and press down firmly with a spoon.
     
  3. Bake at 300 degrees F in convection oven for about 60 minutes.
     
  4. Remove from oven and invert each loaf over 8-inch wire rack to drain grease and juice.
     
  5. Spread 1/2 cup of catsup over each loaf. Cut into portions 5 to 6 ounces each and keep warm.

Ten lbs of ground meat! Cutting down ground meat and onions by 10 is easy, but what about tomato sauce portion

HOW DO YOU CONVERT THIS RECIPE FOR ONLY 2 TO 4 SERVINGS?

I do once a month cooking as I find it easier to cook one day and then heat the rest of the time. With this recipe, I would do the whole thing and then divide it into the portions that I would like to serve. Package for freezing and store until I wanted to serve the meatloaf. Also, with meatloaf you can freeze it cooked or uncooked whichever is easier for you. You can divide by 10 but why bother?
