Bacon Fried Rice

I would like to order bacon with a side of rice. This fried rice recipe uses healthier turkey bacon which is definitely a unique twist to the traditional Japanese style recipes.

Ingredients

  • 6 slices turkey bacon, chopped
  • 3 large onions, chopped
  • 2 green peppers, chopped
  • 4 egg whites, slightly beatened
  • salt and pepper, to taste
  • 2 cups cold brown rice, cooked
  • 1/2 teaspoon light soy sauce

Instructions

  1. Fry turkey bacon in a skillet. Remove from skillet when crispy. Drain the fat except for one tablespoon (save the leftover fat for later use for this recipe)
     
  2. Fry onions and green peppers until golden brown.
     
  3. Add egg whites and stir until slightly set. Remove from pan.
     
  4. Fry brown rice in another tablespoon of turkey bacon fat; at this point add the light soy sauce.
     
  5. Once heated, re-add the turkey bacon, onions, peppers, and egg whites.
