I have been "sneaking in" cauliflower with the noodles in macaroni and cheese style dishes for quite a while now for my son, who is a very picky eater. He just refuses to eat his veggies. It works great since it's color doesn't give it away, and nobody knows the difference but me! I love the rich flavors in this dish and will surely make it again!
