Loaded Acorn Squash is the perfect vegetable side dish because it is hearty, satisfying, and delicious. In this recipe, bright acorn squash is stuffed with wild rice, apples, onions, sage, and toasted pecans. The filling is absolutely wonderful. The mixture of sweet from the apples and cinnamon and savory from the onions and sage works nicely with the nuttiness of the pecans. This stuffed acorn squash recipe is really easy, too. All you need to do is roast the squash, cook the rice, and saute the rest of the ingredients until heated through. Combine everything and then generously fill your magnificent golden squash. Enjoy!
