Cheesy Bacon Spinach

Kent Altena's Cheesy Bacon Spinach recipe takes the flavor of Popeye's favorite vegetable to a whole new level with the addition of sharp cheddar cheese and crisp bacon. You only need three ingredients total to concoct this low carb vegetable side dish. Pair with a piece of grilled chicken or pork for the ultimate low carb meal.

Ingredients

  • 4 thick slices of bacon
  • 4 cups spinach, raw
  • 2 ounces sharp cheddar cheese

Instructions

  1. In a large frying pan, cook the thick slices of bacon. When almost done, remove bacon from the pan and chop into small pieces.

  2. Add spinach to the bacon oil in the frying pan, and turn down the heat. Stir the spinach into the bacon grease and add chopped bacon pieces. Cook until the spinach is well wilted.

  3. Add sharp cheddar to the frying pan, and stir it in. Serve warm.
