Since this recipe uses canned plum tomatoes as the base, it is ideal for the winter months when the fresh ones are not too flavorful. However, during the summer months when I have an abundance of juicy ripe heirlooms, I'd go for the fresh. I'd blanch them for a few seconds first in order to easily remove the skins and weigh out approximately 28 ounces to fit the recipe.
