We eat soup or chili at least once a week when the weather is cooler because I can make it ahead of time, if necessary, and just store it in the refrigerator or freezer to be reheated at my convenience. Since I am not vegan, I don't really use a lot of coconut milk in my cooking, but I think it is a nice touch in this situation. When paired with these spices, it kind of takes on a welcome exotic flavor, like some of my favorite Indian takeout! It might be fun to top it with a sprinkling of pepitas to go along with the pumpkin theme!
