While many homemade creamy soups are made with heavy cream, this recipe uses coconut milk to make a lighter (and vegan!) version of typical asparagus soup. This Vegan Asparagus Soup also has gluten free substitutions. Even if you don't follow a vegan diet regularly, this is a great dish for Meatless Monday or to use up extra vegetables by tossing in other in-season veggies like zucchini or eggplant--just be sure they're cut down to have the same cooking time. This Vegan Asparagus Soup will be a hit with the whole family.
