Spicy Parsnip Soup has a bit of heat and a lot of flavor. This healthy soup recipe is chock-full of veggies. Its simple broth is made by pureeing roasted parsnips, tomatoes, and onions together. Then, this easy vegetarian soup is seasoned with coriander, cumin, turmeric, mustard, and cayenne pepper. Add a few tablespoons of lemon juice to balance out the spice and you will have a beautiful soup that tastes fresh and fantastic. Many homemade soup recipes tend to be intimidating, but not this one. I made this soup this morning and it is delicious. I cooked half the recipe because I only had 1lb of parsnips. It turned out well and I still got about four servings because it had a very thick consistency so I kept adding more water. I adjusted for taste with more cumin seeds and cayenne pepper since we like out food on the spicier side.
