Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup celery, finely diced
  • 1 cup onions, finely diced
  • 1/2 cup carrots, finely diced
  • 3 cloves garlic, minced
  • 2 scallions, finely chopped
  • 2 tablespoons herbes de Provence
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 5 cups chicken stock
  • 1 (14-ounce) can fire-roasted diced tomatoes
  • 1 cup carrots, cut into 1/4-inch rounds
  • 1/4 cup parsley, chopped
  • 1/2 head red cabbage, chopped

Instructions

To Make the Soup

  1. Heat olive oil in a large pot. Then add the celery, onions, carrots, garlic and scallions. Stir in the herbes de Provence, red pepper flakes, salt, and pepper.

  2. Saute until carrots are slightly tender and onions are starting to break down.

  3. Add the chicken stock, tomatoes, chopped carrots, parsley, and cabbage. Bring to a boil then reduce heat to a simmer. Cook until cabbage is tender. Taste and add more seasonings if needed.

I've never really had cabbage soup before, but I enjoyed it! It had a lot more flavor than I thought it would.

I don't usually like cabbage, but this soup smelled so flavorful!

I was a little nervous because this soup didn't look appetizing at first, but once I tasted it I loved it. It's a bit spicy and full of flavor (I'd make it a tiny bit less spicy). It was perfect for a cold afternoon.

I loved how full of veggies this soup was! The slight spice gave it a little kick that made it different than other cabbage soups I've made in the past.

I was shocked by how much I enjoyed this soup. The flavor was fantastic and it makes a hearty lunch.

There's a surprisingly spicy edge that sneaks up on you after a few seconds. Definitely loved it and would recommend it to folks looking for healthy food that still has personality.

I had two bowls of this soup. And could probably have had more. It had a good kick of spice and the broth was delicious.

I really liked this soup! I added a touch of pepper which gave this soup a bit of a zip.

I can't say I was a fan. It didn't have any distinguishing flavors. I personally like my cabbage vinegary, so next time I may try adding vinegar or other spices to give it some kick.
