Lite and Luscious Potato Cheese Soup is a creamy and comforting soup that will fill you up without filling out your waistline. This healthy soup recipe uses low fat milk and reduced fat sharp Cheddar cheese to trim down the fat in this dish. This potato soup recipe doesn't need any butter or cream. Instead, it gets all of its flavor from the garlic, onions, chicken stock, and some vegetable oil. The broth is thick and hearty, just like any cheesy potato soup should be. It is rich and delicious without being bad for you. This guilt-free soup is perfect for a chilly day. Enjoy!

  • 2 1/2 pounds Russet potatoes (about 6), peeled and chopped into 1/2" cubes
  • 4 cups Chicken stock
  • 2 cups Reduced fat milk
  • 1/2 Yellow onion, peeled and finely chopped

  • 1 1/2 cup Reduced fat sharp Cheddar cheese, divided
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions

  1. In large stockpot, heat canola oil over medium heat.
