Ingredients

  • 3 eggs, slightly beaten (or equivalent egg substitute)
  • 1 cup sugar substitute suitable for baking
  • 1 cup dark honey
  • 2 tablespoons butter substitute suitable for baking, melted
  • 1 teaspoon vanilla
  • 1 1/4 cup pecans
  • 1 unbaked (9-inch) whole wheat pie crust

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. In medium bowl with fork, beat eggs slightly. Add sugar substitute, honey, butter substitute and vanilla; stir until well blended.
     
  3. Stir in pecans. Pour into pie crust.
     
  4. Bake 50 to 55 minutes or until knife inserted halfway between center and edge comes out clean.
     
  5. Cool on wire rack.
