Lite and Luscious Macaroni and Cheese uses low fat ingredients to lighten up this favorite comfort food. With three kinds of cheese and some skim milk, this macaroni and cheese recipe is just as rich without all the extra cream and butter. This mac and cheese recipe is also super easy. It only has a short list of steps and an even shorter list of ingredients. You will have a hot bowl of smooth and cheesy macaroni in no time.

Ingredients

  • 16 ounces small elbow macaroni
  • 4 cups fat-free milk, divided
  • 3 tablespoons cornstarch
  • 8 ounces shredded 2% milk reduced fat Cheddar Jack cheese blend (or 4 ounces of shredded 2% milk reduced fat Cheddar cheese and 4 ounces of shredded 2% milk reduced fat Monterey Jack cheese)
  • 4 ounces shredded fat-free mozzarella cheese
  • 1 teaspoon salt (more to taste, if needed)
  • 1/2 teaspoon ground black pepper (more to taste, if needed)
  • Fresh chopped parsley for garnish

Instructions

  1. Boil macaroni per package directions, drain and place back in pot to keep warm.

  2. Measure cornstarch into a small bowl and add 1/4 cup of milk, stirring with fork until combined.

  3. In a separate sauce pan, bring the rest of the milk to a boil, stirring constantly so you don't scorch the bottom.

  4. Reduce heat and add cornstarch mixture to milk in sauce pan, stirring constantly. The mixture will start to thicken immediately.

  5. Add salt and pepper and stir to combine.

  6. Add cheeses and continue stirring until all cheese is melted. The mixture will be thick, cheesy and stringy from the mozzarella.

  7. Remove from heat and pour over macaroni in the other pot.

  8. Stir to combine, taste and adjust seasonings by adding more salt and pepper if necessary.

  9. Transfer to serving bowl and sprinkle with chopped parsley, if desired.
