This looks like a great casserole! I love eating healthy, but I do miss my taco Tuesdays! This looks like a great alternative to traditional tacos. Plus, you can cook this casserole in a big batch and get quite a few meals out of it.

This casserole looks fantastic. I like the addition of spinach a nice touch for nutrition and color. I might add a bit more chili powder and also a bit of cumin and perhaps some corn for additional color and flavor. If you prefer more heat, I would add a chopped jalapeno pepper.
