Mexican Cheese Cornbread

This fresh corn bread recipe uses some Mexican flavors and cheese to really spice things up. If you love Mexican food then try this recipe today! The flavor combinations are tasty and satisfying!

Ingredients

  • 1 cup butter substitute
  • 1 cup sugar substitute
  • 4 eggs
  • 1 4-ounce can diced green chilies
  • 1 16-ounce can creamed corn
  • 1/2 cup grated low fat Monterey Jack cheese
  • 1/2 cup grated low fat cheddar cheese
  • 1 cup wheat flour
  • 1 cup corn meal
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Cream butter, sugar, eggs in a large bowl.  Add chilies and corn.
     
  3. Mix flour, corn meal, baking powder, and salt together. 
     
  4. Add to creamed ingredients. Then add cheese and mix again.
     
  5. Grease (with non-fat cooking spray) and flour an 8x12x2-inch pan.
     
  6. Reduce heat to 300 degrees F and bake for one hour.
