Grilled Apple Chicken

With brown sugar, apples, honey and apple juice this healthy grilled chicken recipe is sure to please the health-conscious eater in your family. Everyone will enjoy this grilled apple chicken dish.

Ingredients

  • 8 boneless, skinless chicken breasts
  • 12 ounces frozen apple juice concentrate, reduced-calorie, thawed
  • 1/3 cup honey
  • 2 tablespoons lemon juice
  • 1/4 cup brown sugar
  • 2 teaspoons cinnamon
  • 3 Granny smith apples, corned and cut into rings

Instructions

  1. Mix apple juce concentrate, honey, lemon juice, brown sugar and cinnamon in a saucepan.
     
  2. Heat over medium heat about 3 minutes, stirring.
     
  3. Set aside 1 cup to use as sauce, use remaining for baste.
     
  4. Put apple rings on grill and brush with basting sauce.
     
  5. Grill 8 minutes, basting often. Turn apples over and baste and grill for 8 to 10 minutes or until tender.
     
  6. Meanwhile, place chicken on grill. Brush with basting sauce.
     
  7. Grill for 5 minutes, basting often; turn and grill for an additional 5 to 7 minutes or until internal juices run clear.
     
  8. Serve chicken and apples with reserved sauce and steamed veggies (green beans, carrots, yellow bell peppers).
