When you're craving something refreshing in the middle of the day, prepare Honey Mint Fruit Bowl for yourself. This healthy snack recipe is naturally sweet, juicy and absolutely delightful. It contains just the right amount of crunch, thanks to the addition of Kellogg's Strong Heart Toasted Cereal. Combine that with almonds and some of your favorite fresh fruits, and you've got a snack that will curb your appetite without ruining your diet. This dish is super easy to prepare, and you can enjoy it anytime throughout the day.

Notes

If desired, store the cooled cereal mixture in airtight container for up to 2 weeks.

Ingredients

  • 2 cups Kellogg's Smart Start Strong Heart Toasted Oat cereal
  • 2 tablespoons slivered almonds
  • 1 tablespoon brown sugar
  • 3 tablespoons honey
  • 1/2 teaspoon grated orange peel
  • 4 cups halved fresh strawberries
  • 4 cups cubed cantaloupe
  • 16 pitted dates, quartered
  • 3 tablespoons chopped fresh mint or 2 teaspoons dried mint leaves
  • 1/2 cup orange juice

Instructions

  1. Preheat oven to 325 degrees F.

  2. In medium bowl toss together Kellogg's Smart Start Strong Heart Toasted Oat cereal and almonds (if desired). In small microwave-safe bowl stir together brown sugar, 1 tablespoon honey and orange peel. Microwave at high about 20 seconds or until sugar dissolves.

  3. Drizzle brown sugar mixture over cereal mixture. Toss to coat. Spread on baking sheet lined with foil and sprayed with cooking spray. Bake about 18 minutes or until light brown, stirring after 10 minutes. Cool completely. Break into pieces.

  4. In large bowl toss together strawberries, cantaloupe, dates and mint. Drizzle with orange juice and 2 tablespoons honey. Toss to coat. Spoon into 10 serving bowls. Sprinkle with cereal mixture.
