Almond Cream Double Chow

Almond cream double chow features the Chinese fruit preserve chow chow. This easy fruit salad recipe is yum yum yumtastic.

Notes


  • Chow Chow is Chinese preserved fruit which can be bought in shops specializing in Chinese groceries.

Ingredients

  • 1 pound canned chow chow or mixed fruit salad
  • 2 cups water
  • 1 ounce unflavored gelatine
  • 2 cups skim milk
  • 1 teaspoon almond essence
  • sugar substitute, to taste

Instructions

  1. Chop the large pieces of chow chow in half.  If using mixed fruit salad instead, drain.
     
  2. Place 4 tablespoons of the water in a cup and let stand in a sauce pan of hot water.
     
  3. Place the gelatine into the cup and heat, stirring, until the gelatine has dissolved; cool.
     
  4. Heat the remaining water with milk, sugar substitute to taste, and almond essence.
     
  5. Stir until the sugar has dissolved completely; stir in the gelatine and pour into a shallow, lightly oiled cake tin and cool until set.
     
  6. Cut the almond cream into triangular bite-sized pieces; place pieces in a serving bowl with the fruit and combine gently.
     
  7. Serve very cold.
