This Balanced Breakfast Casserole is so hearty and filling, but less than 300 calories per serving! This breakfast casserole recipe is slightly different from traditional ones because it uses ground turkey, red bell peppers, and sweet potatoes. It is unique, but tremendously tasty. Plus, this dish is very versatile. If you want, you can double the sweet potato or add greens. If you want to cut back on fat, you can brown the meat in chicken broth instead of oil, although using coconut oil definitely helps. Lowering the cholesterol is pretty simple, too, if you switch out half the eggs for egg whites (2 whites for every whole egg). This healthy breakfast casserole can easily accommodate many dietary needs and it is super simple to make.
