Who says cookies cant be easy and healthy? This delightful oatmeal cookie recipe uses applesauce, cocoa powder and bananas to sweeten the batch so you enjoy these pleasures without any guilt. Skinny Monkey Cookies are also super simple to make. There is a short list of ingredients and an even shorter list of steps. These cookies are totally delicious and completely natural. They are also dairy free and egg free so those with dietary restrictions can enjoy them, too. Even though these cookies are technically a dessert, they are the perfect mid-afternoon pick-me-up or post-workout snack. They'll give you energy and satisfaction.

Cooking Time10 min

Ingredients

  • 3 bananas
  • 2 cups old fashioned oats
  • 1/4 cup creamy cashew butter or almond butter
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup unsweetened applesauce
  • 1 teaspoon vanilla

Instructions

  1. Preheat the oven to 350 degrees F.

  2. Mash bananas then stir in the rest of the ingredients.

  3. Let the batter stand for 20 minutes.

  4. Drop teaspoon-sized balls onto an ungreased cookie sheet.

  5. Bake for 10-12 minutes.
