Your New Favorite Easy Chicken Dinner will definitely become one of your easiest dinner recipes ever. This tin foil dinner recipe is super healthy, insanely simple, and fun for all ages. Your kids or grandkids will love that their chicken dinner cooks in tin foil packets. It's not the most traditional way to cook chicken, and that's what makes it fun. Whether you cook this recipe in the oven or on the gril, there is no denying this recipe will be a hit with everyone in your household.
This recipe is perfect for families because everyone can choose what to add to their chicken. Each diner can choose which ingredients they like, then simply twist the ends of the packet in a different shape to indicate who gets which packet. Plus, this is a meal-in-one recipe, so you won't have to worry about what else to make — although if you do want to include a side dish or two, you can't go wrong with a fresh green salad or steamed veggies. Everyone will leave the table satisfied when you serve this easy chicken dinner. The next time someone asks "What's for dinner?" you can whip up this quick recipe. 

Using 2 tablespoons of chili sauce will flavor the dish, but it won't make it spicy. For more “heat,” use more chili sauce or substitute your favorite salsa.

Cooking MethodGrilling, Oven

Ingredients

  • 1 can cream of chicken soup
  • 2-4 tablespoons chili sauce (see Notes below)
  • 1 teaspoon dry herb - basil, thyme, or cumin
  • 2 medium potatoes, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 small bell pepper, thinly sliced
  • 2 stalks celery, thinly sliced
  • 1 1/2 pound boneless skinless chicken - thighs or breasts, sliced into 1/2-inch slices
  • Salt and fresh ground pepper

Instructions

  1. Preheat oven to 400 degrees F. Cut four pieces of foil into 12 x 18-inch sections. Coat one side lightly with cooking spray.

  2. In a bowl, combine the soup, chili sauce, and herbs.

  3. On each piece of foil, layer vegetables and chicken in order given. Sprinkle with salt and pepper. Then, spoon over 1/4 of the soup mixture. Fold and seal the foil with the seam on top. Place packets on a baking sheet, and bake for 30 minutes

  4. Packets can also be grilled over medium high heat for about 20 minutes. Use a covered grill or on an open grill, and turn packets over after 10 minutes.
