Crispy Baked Chicken

This recipe for boneless chicken is a healthy way to enjoy the taste of fried chicken without the calories. Let this recipe show you one of the most ideal ways to cook boneless skinless chicken breast. Simple chicken recipes rarely taste this good.

Notes

The secret to the success of this recipe is to make sure that both the chicken and the yogurt are very cold, hence soaking the chicken in the ice water. The preliminary soaking will help the breading adhere and produce a crisp coating much like that of fried chicken.

If you're serving the chicken on a platter rather than on individual dinner plates, it looks great over kale.

Preparation Time20 min

Cooking Time1 hr

Ingredients

  • Light vegetable oil cooking spray
  • 6 chicken drumsticks, skin removed
  • 3 whole chicken breasts, halved and skin removed
  • 3 1/2 cups ice water
  • 1 cup plain nonfat yogurt
  • 1 cup dried whole wheat bread crumbs
  • 1 cup whole wheat flour
  • 1 tablespoon Old Bay seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Creole seasoning
  • 1/4 teaspoon freshly ground black pepper
  • Dash cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano

Instructions

  1. Preheat the oven to 400 degrees F. Coat a baking sheet with 3 sprays of the vegetable oil.

  2. Put the chicken in a large bowl with the ice water. Put the yogurt into a medium bowl. Set both bowls aside.

  3. Toss bread crumbs, flour, Old Bay, garlic powder, creole seasoning, pepper, cayenne pepper, thyme, basil and organo into a large, tightly-sealing plastic bag. Seal and shake well to mix.

  4. Remove 2 pieces of chicken from the ice water. Roll each piece in the yogurt.

  5. Put the chicken into the plastic bag, reseal, and shake to coat thoroughly. Transfer the breaded chicken to the prepared baking sheet. Repeat the process until all 12 pieces are breaded.

  6. Spray the chicken lightly with the vegetable oil. Place the baking sheet on the bottom shelf of the oven and bake for 1 hour, turning the pieces every 20 minutes to allow even browning. Serve hot or at room temperature.

Hi Member 17604, Unfortunately, we do not have any recipes for broasted chicken at this time, but if you come up with one and would like to submit it we would love to add it. -Editors of AllFreeCrochet

I am looking for a receipe for BROSTED CHICKEN. The only place I've been able to find it is in Pennsylvania.

I have a recipe very similar to this. One hour is a long time at 400 degrees, even for the legs. I would check it after 30 minutes. If you dry out the breasts, they're ruined.
