20 Minute Coffee Cake

Cooking Time20 min

Ingredients

  • 1 1/2 cup white whole wheat flour
  • 1/4 teaspoon salt
  • 1/3 cup sugar substitute suitable for baking
  • 3 tablespoons butter substitute suitable for baking, melted
  • 2 teaspoons baking powder
  • 2 egg whites
  • 1/2 cup skim milk

Instructions

  1. Preheat oven to 425 degrees F
     
  2. Combine flour, salt, sugar substitute, melted butter substitute and baking powder. Then add egg whites and milk.
     
  3. Top with cinnamon sugar and melted butter if desired. Bake until a toothpick or wooden skewer comes out clean, about 20 minutes.

I assume that with only 1 1/2 cups flour it would only make a 8 or 9 inch square. Notes state that it could be doubled - I assume to a 9x13 or 2 squares, or a 2 layer cake. I guess they think we are all geniuses or can read their minds.
