No Guilt Banana Coconut Bread

This banana bread recipe won't leave you feeling blue for the rest of the day. Punched up with some fresh coconut, this No Guilt Banana Coconut Bread is a delicious treat for any time of year.

Cooking Time1 hr 30 min

Ingredients

  • 1 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 10 tablespoons butter substitute
  • 1/2 cup sugar substitute
  • 1/2 cup brown sugar
  • 4 egg whites
  • 2 fresh bananas, very ripe
  • 1 cup fresh coconut, shredded
  • salt, to taste

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Prepare loaf pan.
     
  3. Sift the flour, baking soda, and salt together. Cream butter and sugars until creamy.
     
  4. Add egg whites one at a time and combine well.
     
  5. Mix in bananas, then mix in dry ingredients.
     
  6. Mix almost all the coconut, leaving out the last 2 tablespoons.
     
  7. Bake loaf for 60 to 70 minutes, or until loaf feels firm. About half way through, sprinkle the remaining coconut on top of the loaf.
