Turkey Vegetable and Rice Soup

Whip together a healthy soup with diced turkey (leftover roast turkey works wonderfully), vegetables and rice in under a half hour. This makes for a healthy meal anytime.

Ingredients
- 14 1/2 ounces stewed tomatoes
- 4 1/2 ounces canned mushrooms, sliced and drained
- 14 1/2 ounces low sodium chicken broth
- 1 pound cooked turkey, diced
- 1/4 cup red wine
- 1 cup frozen mixed vegetables
- 1 small onion, chopped
- 2 cloves garlic, minced
- 8 ounces tomato sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/3 cup instant brown rice
Instructions
- Mix all ingredients except rice together and bring to a boil.
- Reduce heat to low and add rice. Simmer for 15 minutes, making sure the rice is cooked before serving.
