Light Creamy Chicken Curry

Our light creamy chicken curry is delicious and yet still better for you than traditional creamy chicken curry! If you were looking for an easy curry chicken recipe then you've come to the right place. Be sure to bookmark this recipe and use it again later!

Ingredients

  • 4 to 5 chicken skinless breast fillets, diced
  • 2 onions, chopped
  • 1 garlic clove, crushed
  • 3 tablespoons light cooking oil
  • 15 grams (1/2 oz) medium curry powder
  • 1 400 gram (14 oz) can of evaporated milk
  • Salt and black pepper

Instructions

  1. Cook the chopped onions and garlic in the light oil, allowing them to color slightly.
     
  2. Add the curry powder and continue to cook.
     
  3. Season the diced skinless chicken breast with salt and pepper and add to the curried onions.
     
  4. Turn in the pan until completely cooked on all sides.
     
  5. Add the evaporated milk and bring to a simmer.
     
  6. Cook for 15 to 20 minutes, stirring every now and then to prevent it from sticking. Taste for seasoning and add curry powder to taste.
     
  7. To lift the finished dish, sprinkle with some fresh coriander.
