Carrot Coriander Tomatillo Sauce

Ingredients

  • 1 bowl Kettle Cuisine Organic Carrot and Coriander Soup
  • 1/4 cup orange juice, freshly squeezed
  • 1/4 cup tomatillos, roasted or canned
  • 1/4 cup dark brown sugar
  • 1 teaspoon sherry vinegar
  • 1 teaspoon lime juice, fresh squeezed
  • 1/4 teaspoon Tabasco sauce
  • 1/4 teaspoon ancho chile
  • 1/8 teaspoon cumin, ground
  • 1/4 teaspoon kosher salt
  • 1 tablespoon cilantro, finely chopped

Instructions

  1. Thaw soup in the refrigerator overnight or defrost in the microwave- pull back seal and microwave for two minutes
     
  2. Heat ingredients in a small metal sauce pan over medium heat
     
  3. Mix thoroughly, stirring as needed
     
  4. Bring to a simmer and remove from heat
     
  5. Cool to room temperature, cover and refrigerate
