Loaded Chicken Pasta Salad

You just got invited to a summer barbecue but you have no idea what to bring. Quick, whip up this easy pasta salad recipe for Loaded Chicken Pasta Salad. It's a taste sensation perfect for a mini vacation.

Ingredients

  • 1/4 cup low sodium chicken broth
  • 1 cup chicken, cooked and cubed
  • 2 cups broccoli, chopped into small florets
  • 1 yellow or red pepper, diced
  • 4 scallions, sliced
  • 1 clove garlic, minced
  • 1/4 pound fresh spinach leaves, removed of stems and torn into chunks
  • 1 pound tricolor whole wheat fusilli, cooked and cooled
  • 1 cup ripe tomatoes, chopped
  • 1/4 cup basil, chopped
  • 1/4 cup light olive oil
  • 2 tablespoons balsamic vinegar or red wine vinegar
  • 1/2 cup reduced fat Parmesan cheese, to taste

Instructions

  1. Heat broth in large nonstick skillet over medium-high heat. Add broccoli, pepper, scallions, and garlic. Stir until broccoli is just crisp tender, about five minutes.
     
  2. Remove broccoli mixture from heat and toss with fusilli and spinach.
     
  3. Mix in chicken, tomatoes, olive oil, and vinegar. If making a day ahead, refrigerate salad.
     
  4. Right before serving, add fresh basil and Parmesan cheese.
