Slow Cooker Celebration Cake

If your idea of brainstorming birthday cake ideas is going to the grocery store bakery counter, then this Slow Cooker Celebration Cake recipe is for you. No matter what special day it is, this is one of the best healthy cake recipes to use.

Notes

Tip for baking cakes in slow cookers: be sure to use less than 1 cup sugar for every 2 cups flour used, and use a liner.

Cooking MethodSlow Cooker

Ingredients

  • 2 cups whole wheat pastry flour or white whole wheat flour
  • 1/4 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 1 cup butter, or equivalent butter substitute suitable for baking
  • 1 cup sugar, or equivalent sugar substitute suitable for baking
  • 1 teaspoon nutmeg
  • 6 eggs, or equivalent egg substitute suitable for baking

Instructions

  1. Prep your slow cooker ahead of time by setting it to High for 20 minutes before preparing the cake.
     
  2. Fit a in liner into the slow cooker. Spray with cooking spray and flour an 8-cup capacity baking tin.
     
  3. Mix together the flour, cream of tartar and salt, and set aside.
     
  4. Cream the butter, then add sugar, vanilla, and nutmeg. Beat until fluffy. Add eggs, one at a time, beating one minute after each.
     
  5. Blend in flour mixture to the butter miixture, being sure not to over mix.
     
  6. Spread mixture in tin, and put on lid or lay terry towel over it.  Put in slow cooker, cover and let cook for 3 hours or until cake has begun to pull from sides.
     
  7. Uncover. Let stand in tin on cake rack about 10 minutes, then turn out to cool. Dust with confectioners' sugar if desited, then slice and serve.
