Cooking MethodNo Bake

Ingredients

  • CAKE:
  • 1 cup Brazil nuts, soaked and sprouted
  • 1 dash salt
  • 1 cup dates, soaked
  • 1/3 cup cacao powder
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract
  • FILLING:
  • 1/2 cup walnuts
  • 1/3 cup honey
  • 1 cup coconut flakes
  • CHOCOLATE FROSTING:
  • 1/3 cup dates, soaked
  • 1 teaspoon olive oil
  • 1 tablespoon cacao powder

Instructions

  1. To make the cake, first start off by grinding together the Brazil nuts and salt in a food processor for 30 seconds. Then, add in soaked dates, cacao powder, coconut milk and vanilla and process until everything is integrated. Form into cake shape. Make 2 to 3 cake shapes if you'd like a layer cake. Use parchment paper if you'd like to flip it. For one cake, press into cake pan. Freeze for 10 minutes while you're making the frosting and filling.

  2. For the filling, first grind the walnuts in a food processor. Then, stir in the honey, vanilla, salt and coconut by hand. Fold onto each layer.

  3. To make the frosting, cream together the soaked dates, olive oil, cacao powder, salt and vanilla in a personal blender. Put on top of cake.

The recipe calls for coconut milk, but when I watched the "How-To" video, what the woman said was coconut milk did not look like coconut milk. I believe that was coconut water she actually used. Which is the correct ingredient?
